Eat Your Greens!
I make some type of green dip (pesto?) several times each week.
It is a way for me to “Eat more greens!” ~ my motto.
Always organic ingredients.I mix everything in the food processor. I often start with half a bag of frozen peas.The base is: olive oil, lemon juice and little himalayan salt. Usually a bunch of cilantro, other herbs like parsley, mint are great additions.
More greens to add: kale, arugula, chard or spinach. I also have all of these in my fridge as I go to one of my local farmers markets at least once each week.
I might even add a little something to make it creamier: little tomato or avocado.
Want a chunky texture?
Add celery bits, carrots or kohlrabi lastly to the food processor.
Pulse gently so there is still some texture in your final mixture.
Looking for a little more punch? Add small amounts garlic, ginger or onion.
Looking for something more substantial? Add something proteinaceous like walnuts, pepitas, pine nuts, almonds or macadamia nuts. I basically measure in handfuls.
